You guessed it folks, we’re talking about kale. What is it about this spinach lookalike that has everyone in a food frenzy? We decided to do some earthy digging on what lies in the world of kale and how to cook with it.

So where does this nourishing nibble actually come from? If you thought a curious botanist stumbled upon it recently, you’ll be surprised to find out that it dates as far back as Europe in the Middle Ages. Looking for a healthy snack alternative to popcorn or potato chips? Try whipping up a batch of these kale chips. They’re quick and easy to make and not to mention guilt free! We ate ours on freshly sliced baguettes.

Ingredients:

1 bunch of kale
1 tsp salt
1 Tbsp olive oil

Method:

1. Preheat your oven to 175°C.
2. Line a baking tray with baking paper.
3. Tear up the kale into small chip-sized pieces.
4. Wash and thoroughly dry the kale – it’s important that it’s as dry otherwise it will steam instead of crisp.
5. Drizzle the olive oil over the kale and mix through so that it coats every piece evenly, then sprinkle with salt.
6. Bake for 10–15 minutes until the edges are brown.

Feel free to experiment with different seasonings like parmesan, chilli powder or even a kick of cayenne pepper.
