Nina Timm’s herb butter

Great food doesn’t always have to be complicated. As Nina Timm knows, sometimes all it takes is a really simple addition like homemade herb butter, to bring a dish into its element. She whipped this up for us recently, filled with secret ingredients, that are sure to butter your family right up.

‘To make this butter takes literally minutes, so if you are making, double up the recipe and keep the rolls of  butter in the fridge or freezer. It is delicious on steak, fish or grilled mushrooms and makes the most tasty garlic loaf for your next braai.’ – Nina Timm

Ingredients (makes a 220g log):

1 x 100g 100% goats cheese feta
100g butter
15ml capers – drained and chopped
15ml green peppercorns – drained
15ml red peppercorns
15ml chopped fresh herbs of your choice – mint, oregano and thyme works well

Method:

1. Place all the ingredients in a food processor and blend until it all comes together and is mixed properly.

2. Spoon your butter mixture onto a sheet of cling film or wax paper and roll into a log. Refrigerate until needed.

This herb butter will transform grilled steak, fish or chicken into tender, succulent cuts and is a simple treat served on a baked potato or on some toasted ciabatta. Right on time for the cold front.
