Minichefs: strawberry and cream pancakes

A popular, quick weekend meal in our home is a batch of pancakes which can be whipped up in record time for any number of people.

While elaborate fillings of creamed spinach or smoked salmon are sure to impress, the good old cinnamon sugar with lemon juice remains a popular choice. Now, with strawberry season in full swing we have been experimenting with desert-type pancakes. The strawberries and cream filling seems the perfect way to end off a pancake feast.

Tools used
Electric mixer
Measuring cups
23cm non-stick frying pan (browse  some top quality non-stick frying pans)
Spatula
Chopping boards and knives

Ingredients for 6 pancakes:
1 cup flour
2 eggs
1¼ cups milk
1 pinch salt
200g strawberries

Whipped cream
Honey (Syrup can also be used, but without it, this is a sugar-free recipe)

Method
1. Whip up the cream with an electric mixer then transfer to another bowl.
2. Chop up the strawberries.
3. Beat the pancake ingredients together well (no need to wash the mixer).
4. Add a small amount of vegetable oil to a non-stick frying pan and bring to a moderate heat. Use a soup ladle to spoon some mixture into the center of the pan and then tilt the pan from side to side and front to back to spread the mixture evenly. This is where an adult needs to take over from little ones. (Pancakes should be thin, so only put enough mixture to just coat the bottom of the pan)
5. Once the liquid mixture has cooked, loosen one edge of the pancake with a spatula and turn the pancake to brown slightly on the other side then remove the pancake from the heat and place on a dinner plate. Repeat until all the mixture is finished.
9. To fill, place one pancake on a plate and drizzle with honey then place a row of chopped strawberries and whipped cream across the middle of the pancake and roll.
