Presents with a little thought: biscotti in a French Press

It’s a great feeling to know that you’ve got a present waiting under the tree for your loved one and that they’re going to love it. Presents put together with a little thought bring festive cheer and this little package of biscotti in a shiny French Press might just bring some magic too. A big thanks to Jules Durrant for this winning idea.
My mom’s Italian godmother, Franca, taught her how to make these delectable almond biscuits (commonly known as biscotti) and now she bakes them every year to give away as Christmas gifts. Their real name is Cantucci Di Prato (named after the Italian city of their origin) and they’re traditionally served at the end of a meal with Vin Santo but I prefer them with a cup of coffee on Christmas morning. They would make a delicious and thoughtful present for any coffee lover, packed in a French Press and finished with a festive bow.

Ingredients:
275g castor sugar
3 large eggs
3 egg yolks
500g flour
200g lightly toasted unpeeled almonds
A pinch of salt
1 tsp Nielsen Massey orange extract
1 tsp bicarb
Method:
1. Pre-heat the oven to 190°C.
2. Beat the sugar and eggs (including the yolks) together until foamy and pale.
3. Gently mix in the remaining ingredients until they form a soft dough – I find this is easiest using your hands.
4. Divide into three long sausages and place on a greased baking tray or Silpat mat.
5. Press until flattened to 2cm high x 4cm wide, allowing room to rise.
6. Brush with a little milk or lightly beaten egg.
7. Place in the oven and bake for 15 minutes.
8. Remove and cut diagonally into 2cm wide strips.
9. Return to the oven until completely cooked and dry (about 20-30 minutes), turning halfway. They should retain a pale, golden colour – don’t allow them to brown. *Top tip: A fan-assisted oven is especially useful here as the air helps to dry them out.
