Dinner in under 10 minutes: easy Asian chicken

Need convincing about the perks of microwave cooking? We gave the Lékué Steam Case a test drive and made this flavour-infused, Asian chicken with pak choi in under 10 minutes. Speedy, tender and fresh, this dish had us convinced. High five to busy mums.

Ingredients (serves 2):

3 Tbsp sweet Indonesian soya sauce
3 Tbsp sweet chilli sauce
3 Tbsp water
A thumb sized chunk of ginger, julienned
2 chicken breasts
NoMU Spicy Chilli to season
1 red chilli – deseeded and thinly sliced
4 baby pack choi
A handful of mange tout
½ cup peas
Fresh coriander, to serve

Method:

1. Remove the tray of the steamer and in the base, combine the sweet soya, sweet chilli sauce, water and ginger.
2. Place the tray back into the steamer. Season the chicken breast with NoMU Spicy Chilli and place the chicken on top of the tray.

3. Close the steamer and place in the microwave on high for 6 minutes. The Lékué Steam Case can also go into the oven, so if you don’t have a microwave, you can steam the chicken in the Steam Case at 200ºC for 15 minutes.
4. Remove from the microwave (or oven) and add your vegetables and chilli onto the tray with your chicken. Close the steamer and microwave on high for 1 minute. If you’re using the oven pop it back in for a further 10 minutes.
5. Remove from the microwave and allow to rest for a few minutes.

6. Place the vegetables into serving bowls, top with sliced chicken and drizzle over the soya cooking juices and ginger.

Serve immediately with fresh coriander. It literally couldn’t be easier.
