Product Info
Styled after the Japanese Cook's Knife this blade is just right for preparing not only fine Asian but also Western cuisine. The hollow edge creates pockets of air which prevent extra thin or soft slices from sticking to the blade.
Based on the best-selling Wusthof Classic Series, each Wusthof Classic Ikon knife is drop forged from a single piece of chromium-molybdenum-vanadium steel and tempered to an optimal Rockwell 58 hardness. This specialised high-carbon, stain-resistant alloy ensures that the cutting edge of the knife is both razor sharp and easy to resharpen.
The knife blade is skilfully honed by hand to an incredibly sharp edge, the entire length of which can be sharpened due to the partial bolster. The blade is ground thinner than usual, so there is less resistance when chopping and slicing. Finally a computer controlled grinding and polishing of the blade ensures that there is a perfect tapering from bolster to tip providing you with a knife with maximum strength, balance and heft.
Bolster:
It is the perfectly weighted bolster which gives the knife its heft and serves to protect your fingers too. The Ikon Series has a precision bolster angled towards the hand for exceptional comfort, control and balance. The precision bolster is tapered, allowing total-edge sharpening from tip to handle.
Handle:
The full tang knife has a beautiful, synthetic handle that is stylishly contoured to give your hand comfort and control. Stainless steel triple rivets secure the slightly curved, weighted handle to the blade while maintaining its elegant appearance and superb ergonomic comfort.
Cleaning:
If you value your tools we recommend that, after each use, you wash your knives with warm water and a little detergent, rinse carefully and dry with a towel. Corrosive food particles will not affect your blade if washed off directly after use.

Knife Sharpening

Dishwasher Instructions
Although some Wüsthof products are dishwasher safe, we do not recommend that your knives and scissors be put in the dishwasher. Blades can knock together, damaging them, and if not washed soon after use, corrosive food particles can damage the blade. Rather wash your knives as soon as possible after each use with warm water and a little detergent, rinse carefully and dry with a towel.
Warranty Info
Wüsthof knives have a 10-year warranty and will be repaired or replaced after thorough inspection if there are any defects in workmanship or materials. This warranty assumes proper care, maintenance and intended use of the knives.

German precision
Beautifully made. Strange shaped handle fits like a glove when chopping and is obviously well thought out. Handle/blade join a bit sharp if your grip extends over it. Lighter than I thought it would be for a German blade.

Great knife by Wusthof
This is the second Wusthof Classic Ikon I've bought. The previous one was the 20cm Chefs knive. This one is smaller and even better to work with. Really enjoy the knife and Wusthof's quality is excellent as always.
