–Savour the taste of the Mediterranean 🦐Spanish Seafood Paella Recipe
Paella is one of those meals people just love coming home to and, while bursting with flavour (and being super impressive looking), it’s perfect for sharing round the table with loved ones. Plus, it’s easy to throw together too! Here’s our paella recipe — a Spanish, saffron-infused seafood wonder.
–Ingredients:
- 1 large onion, diced
- 1 clove garlic, crushed
- Olive oil
- 200g chorizo sausage, cut into thick slices
- 1 pinch of saffron
- 1 heaped tsp smoked paprika
- 1 yellow bell pepper, cut into big pieces
- 300g paella rice
- 5 ripe tomatoes, chopped
- 1 litre of good quality chicken stock
- Salt
- Pepper
- 15 fresh mussels
- 12 prawns, cleaned but still in their shells
- 200g chicken, cut into small pieces
- 400g fish cut into large chunks (we used hake)
- 200g squid, cleaned
- Fresh or frozen peas
- Fresh parsley
- Rind and juice of 1 lemon

–Method:
- On a low heat start off by frying the onion and garlic in a little olive oil until the onions are soft.
- Add the chorizo and fry until crispy.
- Add the saffron, paprika and peppers and fry for another 10 minutes.
- Add the rice and fry for 1 minute, coating it with the juices in the pan.
- Add the tomatoes and stock and cook until the rice is al dente. Stir every now and then to make sure the rice doesn’t stick to the pan.
- Season with salt and pepper.
- When the rice is al dente (this takes about 15 minutes), add the mussels, prawns, chicken and fish pieces.
- When the mussels start to open and your chicken is cooked, add the squid and frozen peas into this tasty mix. Simmer for another few minutes until the peas have thawed, if using frozen, and the squid is no longer translucent.
- Finish off with chopped parsley, grated lemon rind and a squeeze of lemon.
