 How to brew tea in a cast iron teapot

• Preheat the teapot by swirling hot water inside, then discard the water
• Add loose-leaf tea to the infuser, using approximately 1 tsp per cup, or use tea bags
• Heat the water separately to the appropriate temperature — never place the cast-iron teapot directly on a stove
• Green tea: 70–80°C
• Oolong tea: 80–90°C
• Black tea: 90–100°C
• Pour the hot water over the tea and steep for 2–5 minutes
• Remove the infuser, if used, and pour the tea into cups
• Rinse the teapot with warm water only, wipe dry and leave the lid off to air-dry completely
