I have had my Sharpening Steel for about 3 years and the grooves have slowly faded over the years. Is this meant to happen? Should I buy a new sharpening steel every couple of years or is it my knife that needs replacing?

A sharpening steel with regular use will eventually lose the grooves - this shouldn't really hinder it's sharpening ability though. A steel is used to maintain an already sharp knife and can't take a blunt knife to sharpness - it's basically getting rid of the burrs that appear on the blade. If you are struggling to get your knife sharp, it probably needs to be stone sharpened to bring it back to full sharpness and then you can maintain it on your steel after that. Might be worth getting your knife professionally sharpened as a first step?
