Copper Perfection!
As a self proclaimed kitchenware snob, I bought this pan because of the reputation De Buyer has. I was expecting a beautiful, functional and durable product and that was exactly what I was greeted with. Very good pan but why no lids?
There is something old-fashioned about cooking with this pan — a time before we were terrified of fats. Because this is as far from non-stick as it comes. This does not mean you will be shallow-frying everything in it, but it is the pan in which, for example, your eggs need to be cooked on a "bed" of bacon or sausage. There are all the reasons the cheffies have about why copper cookware (particularly copper pans) give you the best 'cook'... but in the end it is about how, from the moment you pick up the pan to start cooking, you just know... this is working: the food likes the pan; the pan likes the food and this is a great start...
