Be very careful...
...your knives will be razor sharp after using this product. I have very good knives and also owned supposedly good knife sharpeners. I felt my knives were getting too blunt and would give this a try. Wow, the Chef's Choice works really well and my knives are as good as the day I bought them, maybe better.

I have always debated as to whether I buy a sharpener or take my knives in for sharpening every now and then. The cost seemed prohibitive when weighed up against the price of getting all my knives sharpened by a professional. Well, never again!!! Professional machine.
A friend recently said to me: A Porche might be expensive, but it is an excellent machine. The Chef's Choice 120 might be a bit expensive for a home cook, but it is an excellent machine. Excellent sharpener. Owned it 5 years.
This is an excellent sharpener. It has the ability to sharpen any knife. It does need a good steele to hone the blade. I suggest a ceramic honing rod. In the end I “upgraded” to the Work sharp E5, which I now prefer. More effort but better result for me personally.
