Hearty, wholesome soup that feels like a hug!Souper Rustic Instant Pot Vegetable Soup

Get ready to savour the comforting flavours of a hearty vegetable soup with this Souper Rustic Instant Pot Vegetable Soup recipe. Packed with wholesome goodness and prepared with the convenience of Souper Cubes and your trusty Instant Pot, this soup is a delightful addition to your Iftar table. Quick, easy and oh-so-good — tender vegetables, aromatic herbs, and a rich broth that warms both body and soul.

Ingredients:

  • 1 onion, minced
  • 4 cloves of garlic, minced
  • 2 medium russet potatoes, peeled and chopped into small pieces
  • 3-4 medium carrots, chopped into small pieces
  • 3 stalks of celery, chopped into small pieces
  • 1 cup of green beans, chopped
  • 400g can of great white northern beans, drained
  • 800g can diced tomatoes
  • 4 cups broth
  • ½ cup water
  • ½ tsp oregano
  • ½ tsp basil
  • ¼ tsp thyme
  • ½ tsp parsley
  • ¼ tsp red chilli flakes
  • 2 sprigs of rosemary
  • 1 bay leaf
  • Shredded parmesan to taste
  • Salt and pepper to taste
  • Optional: 1 lemon

Pssst.. If you're making this a vegetarian recipe, use vegetable-based broth. If you want to use a meat-based broth, we recommend chicken or bone broth.

Directions:

Step 1: Put minced garlic, onion and chopped vegetables into your Instant Pot.

Step 2: Add diced tomatoes, beans, broth and dried seasonings (oregano, thyme, basil, red pepper, parsley, salt and pepper) and stir. Top with bay leaf and fresh rosemary.

Top tip — If you have a herb bag, we recommend putting the rosemary in there!

Step 3: Make sure the top nob on your Instant Pot is set to sealing, press the soup button, set the time to 10:00 minutes and press start.

Step 4: Once your Instant Pot beeps the soup is ready. Yay!

Let the Instant Pot naturally release some of the pressure for about 10-15 minutes and then release the remaining pressure manually by switching the steam valve to venting (use cloth when releasing the pressure).

Step 5: If eating immediately, season with salt, pepper and parmesan to taste. Add lemon juice (one small wedge per cup) if desired.

If freezing, just add salt and pepper to taste and ladle into your Souper Cubes. Add parmesan and lemon once defrosted and heated through. Delish!
