How to make pistachio ice cream

Celebrations are all about joy, laughter, and indulging in a little something special. So why not wow your guests with homemade pistachio ice cream? With its creamy texture and that nutty, subtly sweet flavour that’s impossible to resist, It’s the perfect way to add a scoop of fun and flavour to any gathering — big or small.

Ingredients:

  • 225g unsalted, shelled pistachio nuts
  • 570ml milk
  • 570ml cream
  • 110g caster sugar
  • 8 large egg yolks
  • 2 Tbsp custard powder

Tools:

  • An ice cream maker (or a touch of patience for the manual method)
  • A trusty food processor

Directions:

Step 1: In a food processor, grind your pistachio nuts down to a fine powder.

Step 2: Pour the cream and milk into a medium-sized saucepan along with the finely ground pistachios and gently heat to just below boiling point.

Step 3: With your pistachio and cream mixture heating on the stove, beat together the egg yolks, sugar and custard powder until silky smooth.

Step 4: Now whisk the pistachio cream mixture into the eggy custard mixture.

Step 5: Return the pistachio custard to the pan and continue to whisk over medium heat until it has thickened — it should just be reaching boiling point.

Step 6: Pour the custard into a bowl and allow it to cool. Place half the mixture into the ice cream maker and freeze-churn for about 30 minutes, until it has the consistency of soft-serve ice cream.

Quick tip: No ice cream maker? No problem! Chill your mix in the fridge for an hour, then freeze it in a container. Every half hour, give it a vigorous stir to keep those pesky ice crystals at bay.

Step 7: Transfer it to a plastic container and place in the freezer. Repeat with the other half of the mixture.

There you have it — a scoop of pure delight, ready to add a special touch to your celebrations with every spoonful!
