Crispy, crunchy, and bursting with flavour 😋Chicken samosas with minty coriander chutney

Airfryer samosas are little crispy pockets of joy — not only are they a breeze to whip up, but also your go-to solution for hassle-free batch cooking and convenient freezing. Just a light brush of oil, and voila! Watch them transform into a delightful golden brown right before your eyes in the airfryer. Samosa seekers — get ready for the crunch!

Prep time: 20 minutes | Cook time: 6 minutes | Serves: 4-6

Ingredients

For the filling:

  • 1 Tbsp vegetable oil
  • 1 onion, finely chopped
  • 500g chicken mince
  • 3 cloves garlic, crushed
  • 1 tsp ginger, grated
  • 2 tsp mild curry powder
  • 1/2 tsp ground cinnamon
  • 2 bay leaves
  • 1 cup frozen peas
  • 2 tsp fresh chilli, chopped (optional)
  • Samosa wrappers, thawed
  • 3 Tbsp flour, mixed with 1-2 Tbsp water to make a light paste
  • 2 Tbsp vegetable oil for brushing

For the mint coriander chutney:

  • 1 cup coriander leaves
  • 1 cup mint leaves
  • 1/4 cup roasted cashews
  • 2 garlic cloves
  • 1cm ginger
  • 2 green chillies
  • Juice of 1 small lemon
  • 1/4 tsp each salt and pepper
  • 1/4 cup water, added 1 Tbsp at a time

Method

Filling preparation:

  1. If you're using an Instant Pot, set it on Sauté mode.
  2. Heat oil over medium heat and sauté the onion until soft and translucent.
  3. Add chicken mince and fry until it starts to brown.
  4. Add all spices, cook for another 30 seconds until fragrant.
  5. Lastly, add peas and cook until warmed through; ensure the mixture is quite dry.
  6. Season to taste.
  7. Allow the filling to cool before using.

Samosa assembly:

  1. Place a wrapper lengthwise on a board.
  2. Spoon a tablespoon of filling into the bottom left corner.
  3. Fold up into a triangle and continue folding until the filling is fully encased in the pastry.
  4. Spread a little flour paste onto the wrapper before the last fold and along the edges to seal.
  5. Repeat until all the filling is used.

Airfrying:

  1. Set your airfryer to 200ºC for 8 minutes.
  2. Brush the samosas with oil.
  3. Arrange in a single layer inside the basket and cook, turning halfway through.

Chutney preparation:

  1. Combine the ingredients for the chutney in a blender.
  2. Blitz until smooth.
