Pour 1 shot of your favourite gin into a glass. Squeeze in the juice of a quarter of a grapefruit. Add ice, top up with tonic, and garnish with a sprig of thyme and a slice of grapefruit (you can also crush the thyme between your fingers to release the flavour better).

Pour 1 shot of your favourite gin into a glass. Use a peeler to create cucumber ribbons, and pop these into the glass. Add ice, top up with tonic, and garnish with basil leaves that have been lightly bruised to release the flavour.
