This Cinsault captivates with a stunning perfume that gives way to rich dark cherry and blackberry flavours on the palate. Its deep and complex profile makes it an ideal companion for strong cheeses and bold red meat dishes like venison.
- Cinsault 2024, 750ml
- Hand-harvested over four days in February for varied ripeness and added complexity
- Whole-bunch fermentation (50%) with indigenous yeasts for spice and freshness
- Aged in a new 1500L foudre from Mittelberger Cooperage (Bozen, Italy)
- Remaining wine aged in 500L and 300L older barrels from the same cooper
- 10 months gentle maturation before bottling on January 7, 2025
- Fewer than 3,000 bottles made
