Cassia vs cinnamon
The gammon recipe in your online course for A very merry festive feast, calls for cassia sticks...is it a train smash if I use cinnamon sticks? Is there THAT much of a difference? Thanks and merry Christmas all round :)

Yes, you can go ahead and use cinnamon. It's effectively the same thing.
