what tool is best for folding

i would like to know what is the best tool to fold in egg whites into a mixture
? a spatula or a metal spoon?
and do you get the same result if you beat it on low with a machine?

I always use a metal spoon for light mixtures and a spatula for heavier mixtures. Beating will deflate the air out of the egg whites so it is better to do it by hand in my opinion :)

I normally use a spatula. I also have to agree with Tandy, always fold in your whites by hand. That'll give you a lot more control.

Another tip is to fold the whites into your mixture in stages, - usually doing it in thirds works well. This really helps incorporate the whites well and not lose too much volume.
