Pastry Questions
I just have two quick questions on the pastry lesson:
- How long should you rest the pastry in the fridge before handling again?
- After the blind bake, when you add the filling, do you let the pastry cool or simply add the filling when hot and put back into the oven?

Hi Adele,
I'm no expert, but I normally leave the dough to rest for 20-30 minutes before rolling and placing it in the moulds. (If someone has better advise, please share)
I have placed fillings in the hot, blind baked pastry, but you can also bake your crust in advance, and add the filling at a later stage.
