Another flop

Hi,
Thanks for all the responses to the espresso cake flop question.
I tried a different recipe lastnight and i had the same thing happen to the cake.
Ive now had 3 tries at a cake and all have been flops (i have always had success with cake).
The last few cakes are all greasy (almost a layer of oil under the cake), crumbly and sunken in the middle (even after 30min and only opening oven door after min 15-20min)
I just wanted some advice on what to rule out....
My BP is still fresh - did the hot water test? Ive made sure im not over mixing and even fold in the flour afterwards.
Could it be the self raising flour that's not working properly (although, even when i added BP as in the espresso recipe the same thing happened) Otherwise something has happened to my oven?
I need to bake a cake for my little girls 1st birthday on Sunday and im at such a loose end?
Any ideas?

Oh, and the recipe i used last night which also flopped the same way was the one for the rainbow cake on the last spatula club mailer.

Hi Jackie,

We're sorry to hear that you're having such cake issues.
If you're sure that your ingredients are fresh and that you're following all the mixing instructions you could look into your oven.
It might be that it is not reaching or holding the correct temperature. Consider using an oven thermometer to check the temperature in your oven while baking, and making sure not too peek too often at it's progress. In addition if your cakes are not looking done after the suggested cooking time you can leave them in for a little longer while keeping an eye on them to make sure they don't get over baked.
