Can I substitute the eggs in the recipes with something that's vegetarian/vegan friendly?

You can substitute 1 tablespoon of ground chia seeds mixed with 3 tablespoons of water for every egg needed. Mix the chia and water and leave it for 5 minutes until it has formed a gel, then use it where the egg is required! You can buy chia here - http://www.yuppiechef.com/by-nature.htm?id=10242&name=By-Nature-Chia-Seeds-200g. (Answer from Lexi Bechet, she left it as a comment on the red velvet cupcake recipe on Spatula).
