Sugar vs Castor Sugar

I have begun baking and have used normal sugar where the recipe says sugar - i notice that the recipes on this site mostly uses castor sugar - what is the pro's and con's ?

Castor sugar is finer so therefore it mixes better. Normal sugar takes longer to mix it and could leave a grainy texture. I've used both but 90% of the time I use normal sugar and everyone's happy with the taste and texture at the end of the day. As long as you're happy with the end result - that's all that matters. Now that you've started baking, I hope you love it so much that you don't want to stop.
