I have tried Sarah graham's lesson on making pettit fours, my conclusion: fondant icing is a nightmare! I bought some from a baking shop, they called it plastic icing but assured me that it was the same thing as fondant. Try as I might I couldn't get the consistency to be the same as in her video, its either too sticky or waaaay too runny and soaks into the cake instead of covering it. Any tips or tricks on how to use fondant properly or where to buy the right stuff in the Pretoria area?

Sorry to hear you've had trouble with the icing.

Sarah does provide a recipe to make it from scratch but it's quite difficult to master, which is why we suggested that people buy it if they want to save time.

The type of fondant needed for the recipe is 'wet' fondant, which is quite different to the 'plastic icing' or dry fondant used to make cake decorations.

It's available in all the baking stores in Cape Town, so I'm hoping that it won't be a problem to get hold of it in Pretoria. Once you have the right icing, you'll be well on your way to producing pretty little sweet treats.

Another option, if you'd like a quick fix, is to melt dark chocolate over a double boiler and drizzle that over the petit fours. It looks just as beautiful.

Hi, I got fondant icing from Woolworths (for cakes)...but what a nightmare...quite expensive and tried it 3 times, however, it just doesn't melt...after over an hour (for the 3rd time) I just gave up...it becomes very warm and form a crust on top. I attempt the recipe that Sara gave and it works wonderful and it was not that time consuming...and actually very easy. You must try it

Hi Sandra, Months after asking this question I found that wootwoths sell 'royal icing' powder and this is the wet fondant needed for this recipe. works like a charm. The other fondant is 'dry fondant' and you are right, it doesnt melt!
