Silicone temp versus metal temp
I recently received some silicone cake and biscuit moulds as a present. One is a Madelein.
Do you bake them as long as in the tin mould and do I put the silicone mould on a baking plate before putting it in the oven and what temperature? Can I use the same recipe thats on Yuppychef recipes or what?

Hi there Anne-Marie,
What a great question! Firstly, silicone bakeware is super cool because it's flexible and easy to clean. You'll never have to worry about anything sticking again.
Secondly, silicone is actually a very poor conductor of heat, in comparison to steel, so you may need to raise the temperature or bake for slightly longer than in conventional bakeware. Placing silicone trays on a metal tray before going into the oven can help stabilise the silicone and help to conduct heat everywhere.
You can use any recipe to bake in silicone, just test for doneness around cooking time, and add an extra few minutes to baking time if it's not done yet.
