In the lesson for roasting once the meat is removed from the oven it is covered in tin foil and allowed to stand for up to 15 minutes. How do you re-heat the meat to serve hot. Or will the tin foil covering maintain enough heat

Hi Roger

If you use the tin foil with the shiny side on the inside and seal it around the roasting pan, the roast should be able to rest for the full 15min and still be more than hot enough to serve. You will need to get the timing right of all your other dishes so that the roast and rest time is driving the overall timing of the meal. Good luck!

Yes, it will stay hot enough under the foil. Put the pan on a couple of kitchen towels instead of on a cold surface.
