Substitute for Fennel?

I know the French love to use fennel in their cooking, but I absolutely detest the aniseed flavour of it. Is there something else I can substitute it with?

Not a fennel fan either! Although it does add a very distinctive flavour, I just cannot get used to it. Instead of fennel then, maybe try caraway (also an acquired taste in my mind), dill or even cumin? All of them in their own right add a lovely fragrance to any meal

Hi Kate,

If your recipe uses the fennel bulb, the taste is less strong when the bulb is roasted first - it becomes sweeter and less aniseedy. If you do decide to substitute it, try celery in a soup or stew, as they are quite similar in texture, if not in taste.
