Electric Mixer
As a student, my kitchen equipment is still in it's humble beginnings.
In The Art of Baking course the tutorial on sponge cake uses a lovely electric mixer to prepare cake mix. Is it possible to do the mixing by hand and can one expect similar (as yummy) results?

Hi Vanessa,
In the days before electricity and all the appliances you can shake a stick at, cooks everywhere mixed ingredients by hand using the humble tools they had at their disposal, and you can do the same.
To cream butter and sugar together, for example, make sure that your butter is soft (not melting but at room temperature on a warm day), and using the flat back of a wooden spoon beat the butter and sugar together until a smooth, creamy paste has formed and the colour has lightened from the yellow of the butter to a lighter colour, closer to fresh farm cream. This will take considerable elbow grease and a bit more time than using a mixer, but it is more than possible.
When mixing by hand, watch the videos carefully to make sure that your mixture most closely resembles the colour and texture of that in the videos. Just think though - you're doing a serious arm workout before you've even made the cake; it's great!
