Does anyone know how or have a recipe for Ravioli, I just cannot seem to find one.

My favourite is a Haloumi and Ricotta Ravioli, served in a butter and lemon sauce, topped with shredded mint and fresh grated haloumi.

The filling is very simple:
300g Ricotta, 360g grated Haloumi, 1/2 cup shredded mint, and 2 eggs to bind it. Just mix it all together.
This amount of filling will fill a quantity of dough made from 5 eggs and about 450g of flour (flour quantity will vary depending of size of eggs, and air humidity)

Mind you, you might want to half the recipe, as I use this amount for dinner parties of 8-10 people!
