Hi there,
Those tricky cupcakes want to get eaten sooner then their time hey? Well this is a known problem to bakers so don't feel alone in this. Some solutions work and sometimes they don't. It seems depend on a number of factors, including the type of paper liner that you are using.
Here are the top tips to help:
1) Be sure to fill the cupcake pans full enough so that the batter will stick to the top of the paper liner, keeping it adhered. Cupcake pans should be filled 1/2 – 2/3 full. Any fuller than that, and the batter will spill over the top, making a flat, messy cupcake top.
2) Turn the cupcakes out of the pans as soon as they are finished baking. If cupcakes are left in the pan too long while cooling, steam will condense between the cupcake and the pan, causing the liner to loosen.
3) Do not store them in an air tight container, when you seal cupcakes in an airtight container the moisture of the cupcakes spreads to the liners and they pull away. So use cardboard boxes, or partially sealed cake tin as a second choice.
