Problems with the coffee cake from Sarah's baking course
I tried the coffee cake from the first baking lesson. First of all it rose at the sides, but left a hollow in the middle. Secondly it was tough and dry. I wasn't sure if my oven was 'hot' so I preheated to 190ΒΊ then turned it to 180ΒΊ. When I saw the hollow in the middle, I left it in for a further 5 minutes. Could this have been the problem?

Hi Christine
Firstly, do you have an oven thermometer? It sounds like your oven is baking 'hot' and cooking the outside of the cake but not the middle and that's why it's sinking.
Other issues could be:
Over-beating the cake, this incorporates too much air, which can then collapse
Opening the door too early can cause a cake to sink in the middle too
I'd love to hear how you get on if you try the recipe again!
Best wishes
