Watermelon and raspberry lemonade

Hot days demand refreshing drinks. Simple as that. Lemonade always seems to hit the spot, so why not give this raspberry and watermelon twist a go? We’re willing to bet that if this version was sold at lemonade stands the world over, it would give the original a good go for its money. That’s pink drinks for you.

Watermelon

Ingredients (makes approximately 3L):

2kg watermelon, peeled and cut into chunks
250g raspberries (reserve a handful for decoration)
160g sugar
180ml water
Zest and juice of 4 lemons

Method:

1. Place the watermelon chunks and raspberries in a blender and blitz. Now push this pink goodness through a sieve to catch the thick pulp. You should get approximately one litre of liquid.
2. Heat the sugar and water with the lemon zest. Once the sugar has dissolved, remove from the heat and allow to cool, then stir in the lemon juice.
3. Mix the cooled lemonade with the watermelon juice mixture, add 2L of water to dilute or as per your taste.

Serve with lots of ice and the reserved raspberries for fruity chews in between.
