Peaches and cream pancakes

Traditionally a summertime dish, peaches and cream are a simple way to turn your pancakes into a lip-smacking dessert fit for any occasion. The season for this fleshy fruit will soon be behind us, so sneak these peaches and cream pancakes onto your table before they’re all gone.

If these look too good to miss out on but you find yourself sans a season of plentiful peaches, you can still use canned peaches. Alternatively plums and pears could work quite nicely too.

Ingredients (makes 8 pancakes):

1 batch basic pancakes
400ml cream, whipped
2 tsp icing sugar, sifted
1 vanilla pod, seeded
Icing sugar, to serve
Sliced peaches (or any other fleshy fruit of your choice), to serve

Method

1. Make a batch of classic pancakes using this basic pancake recipe. Alternatively you could give the NoMU pancake and waffle mix a very quick whirl.
2. In a bowl, combine the whipped cream, icing sugar and vanilla.
3. Spread ½ cup of the cream mixture over 1 pancake, arrange your peaches in one quadrant and fold to enclose filling. Repeat with remaining pancakes and filling.
4. Place one or two pancake wedges on a plate and dust with icing sugar just before serving. We used a nifty little 8cm sieve from Cuisipro to ensure the dusting goes only on the plate.
