Minichefs: muffuletta picnic sandwiches

Kids are all little adventurers at heart so a picnic on blue sky days is a great way to keep them entertained. Plus, if they can make the food themselves with a little grown-up supervision, isn’t that more fun for everyone? This muffuletta (a stuffed sandwich which is left  for an hour or two under something heavy) makes for great picnics or padkos.

Ingredients (makes 4 individual muffulettas):

4 paninis
30g butter, melted
200g shaved ham
500g tomatoes, sliced
1 cucumber, sliced
200g cheese, sliced
Sweet chilli sauce
Salt and pepper

Tools:

Spoon
Pastry brush
Potato peeler/cheese slicer
Utility knife – we used the Scanpan Spectrum Utility Knife
Heavy pot
Wax paper or plastic container

Method:

1. Cut the panini in half. Hollow out the top and bottom with a spoon, leaving 1cm crust around the edges. Keep the insides for breadcrumbs.
2. Brush the inside of the loaf with melted butter.

3. Start layering your ingredients, beginning with the ham. Add the tomato, cucumber and cheese in layers with the odd dash of seasoning and sweet chilli sauce in between.

4. Close your roll and place under a heavy pot or pan to compress in the fridge for an hour or two.

5. Slice and enjoy.
