A winning gourmet burger comes down to four things. A patty to be proud of, a sauce to make your mouth water, a great bun and, of course, a side order of potato-laden goodness. Our favourite would be a homemade patty served with sweet potato wedges and pink peppercorn sauce. But then again, there’s always a Jack Daniel’s bacon marmalade and mature cheddar cheese option to consider. Sound good?

How to make a great burger

Here’s a little selection of gourmet burger inspiration for you to choose from. You can buy any of these elements and only make a sauce but if you’re feeling brave and adventurous and are after the best burger out there, we have a recipe for homemade burgers, two optional potato sides, a relish or a marmalade and even a recipe for beer bread burger rolls. Off you go. All recipes serve four.

Beef patty:

500g lean beef mince
1 tbsp parsley, chopped
1 tbsp coriander, chopped
1 tsp ground coriander
Salt and black pepper to taste
2 Tbsp Worcestershire sauce
1 tsp whole grain mustard
½ onion, finely chopped

Potato sides:

Crispy potato wedges
5 potatoes, peeled and cut into wedges
1 L sunflower oil, for frying
Sea salt flakes for seasoning

Sweet potato wedges
2 medium sweet potatoes, cut into wedges
1 tbsp olive oil
1 tbsp honey
Salt and black pepper

Gourmet burger topping options:

Tomato relish
1 onion, finely chopped
1 tbsp olive oil
2 cloves garlic, crushed
3 tomatoes, peeled and diced
4 sprigs basil, finely chopped
Salt and pepper to taste

Pink peppercorn sauce
3 shallots, finely chopped
1 tbsp olive oil
200ml cream
1 Tbsp pink peppercorns

Jack Daniel’s bacon marmalade
1 Tbsp olive oil
10 rashers of streaky bacon, chopped
2 onions, sliced
100ml water
100ml Jack Daniel’s marinade
2 garlic cloves, chopped
1 small chilli, chopped (optional)
Salt and pepper, to taste

Cheese and extras

Mature cheddar cheese, sliced
Butter lettuce, rocket or red lettuce
Radishes, sliced

Choose any of the above. We think the lettuce/rocket and radish go well with the pink peppercorn and tomato relish combo and the mature cheddar cheese option works perfectly with the Jack Daniel’s marmalade.

Burger buns

Beer bread burger buns
1 bag of your chosen flavour Barrett’s Ridge Beer Bread
210–250ml of your choice of beer (the mix suggests 330ml but less is needed to make firm rolls)
A cube of melted butter
Sesame seeds

Or you can buy sesame seed rolls.

Method:

Crispy potato wedges
1. Keep your peeled and sliced potatoes in a bowl of cold water to prevent them from discolouring.
2. Preheat the oil for deep frying in a deep saucepan, over a medium heat.
3. Drain and pat the potatoes dry with some paper towel. Deep fry in batches until golden brown and crisp, drain again on paper towel.
4. Season with salt and set aside, preferably in a warming drawer or an oven tray on a low temperature.

Sweet potato wedges
1. Preheat the oven to 180°C. Place the sweet potato wedges on a roasting tray.
2. Drizzle with olive oil, honey, salt and pepper and place in the oven to roast. They will need approximately 30 minutes.

Tomato relish
1. Fry the onions until soft and translucent, add the garlic and continue to fry for another minute.
2. Add the remaining ingredients and simmer until thickened and reduced.

Burger patties
1. Combine all the burger patty ingredients and knead well.
2. Divide the mince into patties and mould into shape using a hamburger maker or the palms of your hands.
3. Fry the burger patties in a hot pan until golden brown on each side and medium rare inside. Then keep these in your warming drawer or with a lid on, set aside.

Beer bread buns
1. Preheat your oven to 190°C. Mix your beer bread with your choice of beer, starting with 210ml and adding up to 250ml depending on the consistency. You want a firm mixture so the rolls hold their shape. Divide the batter into four balls, brush with butter and sprinkle with sesame seeds.
2. Pop your beer bread rolls into the oven for 30 minutes. Set aside once done.

Pink peppercorn sauce
1. Fry the shallots until soft and translucent.
2. Add the cream and peppercorns to the cooked shallots and simmer for 15 minutes or until the cream is of a thick consistency.
3. Season with salt and pink peppercorns to taste.

Jack Daniel’s bacon marmalade
1. Heat the oil in a frying pan over medium heat and add the bacon and onions. Cook and stir until the onions become soft and translucent, about 5 minutes.
2. Stir in the water and Jack Daniel’s sauce. Continue to stir and reduce for about 5 minutes.
3. Remove from the heat. Stir in the garlic and chilli. Season with salt and pepper.
4. Place in a covered jar and store in the fridge until the burgers are ready to serve.
