Asian noodle steak salad

Ingredients (serves 2):

2 lean rump or fillet steaks
Freshly ground black pepper
3 Tbsp prepared Teriyaki sauce
1 tsp sesame oil

For the dressing:
3 Tbsp soya sauce
3 Tbsp fresh lime juice
3 Tbsp brown sugar
1 Tbsp Thai fish sauce

For the salad:
1 bag Superlite Shirataki Angel hair noodles, drained and boiled for a minute
1 carrot, peeled and thinly sliced (using a potato peeler) into ribbons
2 courgettes, thinly sliced (using a potato peeler) into ribbons
1 red chilli, deseeded and finely sliced
1 garlic clove, peeled and finely chopped
A handful of fresh mint, basil and coriander


1. Place the steaks in a shallow dish and season with the pepper. Add the teriyaki sauce and oil. Coat well. Cover and marinate in the fridge for 20 minutes.
2. To prepare the dressing; in a small bowl mix all the ingredients together and set aside.
3. Heat a non-stick griddle pan, remove the steaks from the marinade and cook on each side according to your preference. Transfer to a warm plate and leave to rest for one to two minutes.
4. Meanwhile, mix the salad ingredients in a large bowl and transfer to a serving plate. asian salad-004edited 5. Slice the steaks and arrange over the salad. Mix the ingredients for the dressing together and drizzle over the salad before serving.
