A fresh roast cauliflower and broccoli side

Cauliflower, broccoli and cheese sauce can be a bit of a heavy dish for the warmer months. After some gastronomic experimenting, we’ve found the perfect summery twist for this old favourite dish, a perfect side for any mains.

Ingredients:

1 broccoli, broken into florets
1 cauliflower, broken into florets
1 fat garlic clove, crushed
30 ml olive oil
Freshly milled salt and pepper
Zest of 1 lemon
½ cup parmesan shavings
Extra olive oil for drizzling

Method:

1. Preheat the oven to 200°C.
2. In a large mixing bowl gently combine the cauliflower and broccoli with the garlic and olive oil until well coated.
3. Arrange onto a large baking tray and season.
4. Roast for 15–20 minutes.

Serve the veggies warm or at room temperature sprinkled with a generous amount of lemon zest and parmesan shavings. Drizzle with olive oil and you’re good to go.
