I used to have one of those probes with a circular readout showing a picture of a chicken, a lamb, a pig and a cow. And sometimes when the needle got to the right animal the meat was done... within 10 degrees or so!
Now I can set the timer to my taste and go and have a drink, happy in the knowledge that the meat will be perfectly cooked. Where's the fun in that??
