Two fresh juices from Ina Paarman

We’re friends with Ina Paarman, which means we get to hang out at her leafy business premises and talk about food, kitchen tools and South Africa. Ms Paarman got in touch recently to buy a juicer, and after investing in an Oscar DA900 she sent us these recipes for two of her favourite fresh juices, Detox and Late Summer Fruit.

1. Detox vitamin boost

This, I believe, is the cure-all. Overindulgence, general health, lowering blood pressure, etc. In other words it can raise the dead! Do not leave out the ginger or the whole lemon, it gives it structure and makes it an enjoyable adult drink.

2 raw carrots or beetroot, unpeeled
2 long celery sticks with leaves
¼ cucumber – unpeeled or 5 spinach leaves
1 apple, unpeeled
2.5 – 3 cm piece of fresh ginger, unpeeled
¼ fresh lemon, skin and all

Top and tail the carrots or beetroot. Cut everything into smallish blocks (about 2-3 cm) and toss together in a mixing bowl.
Set up the juicing machine and feed the mixed vegetables and fruit through. I do not use the mesh strainer on the container that collects the juice, we like a bit of texture. Remember to squeeze the juice just before you intend drinking it to preserve maximum vitamin content. 2. Late summer fruit cocktail

Use whatever fruit is available, they all seem to taste divine when mixed together. Watermelon is great to give bulk. Serve with ice and fresh mint. Lovely to serve a big jug to start a late breakfast in style.

¼ watermelon, cubed – don’t bother to remove the pips
1 pineapple, peeled and cut into blocks
2 apples, unpeeled and cut into blocks
1 large bunch of washed grapes, picked from the stems
2.5 cm piece of fresh ginger, unpeeled
½ lemon, with skin cut into cubes
ice cubes
fresh mint

Toss all the cut up ingredients in a bowl to mix. Set up the juicing machine just before you are ready to serve start juicing (remove the strainer from the catch basket). Do, get the guests to help, they love getting involved but not too involved! Decant the juice into a jug half-filled with ice cubes. Add fresh mint, give a really good stir and serve soon.
