Parma ham, fig & gorgonzola salad

Figs are just in season, and this is a quick and easy way to use them to create a filling, summery salad. With salty Parma ham, gorgonzola and peanut brittle it combines some strong flavours and while not for the tame palette, is delicious.

Ingredients (serves 6)

Bag of wild rocket leaves
9 ripe fresh figs
200g gorgonzola
180g Parma ham slices
1 peanut brittle bar
2 tbsp honey
2 tbsp lemon juice
2 tbsp olive oil

Method

Spill the bag of wild rocket leaves onto a platter. Cut figs in quarters and arrange on the leaves. Tear Parma ham slices into strips and arrange on the platter. Crumble gorgonzola and peanut brittle over. Mix honey, olive oil and lemon juice and drizzle over the top. Season with black pepper and serve. Download print-friendly recipe.
