How to make a great omelette

Don’t be deceived by this one. Few things hold a candle to a classic omelette and it will always holds heaps of satisfying breakfast charm. So much so, that even though Jamie O is a foodie genius, his YouTube video on how to make the classic omelette is still his most viewed. Here’s a classic recipe with some filling suggestions.

Ingredients

Serves: 1

For the classic omelette
3 large free range eggs
Sea salt
Freshly ground black pepper
1 Tbsp chives, chopped
1 Tbsp butter
1 handful Cheddar cheese, grated (optional)

Optional fillings
Fried streaky bacon
A couple of sprigs of basil
Handful of roasted cherry tomatoes
Handful of grated cheddar
50g goat cheese

Or
Butter fried brown mushrooms
Handful of rocket

Method:

1. Crack the eggs into a mixing bowl with a pinch of salt and pepper.
2. Beat well with a fork. Put a small frying pan on a low heat and let it get hot. Add butter.
3. When the butter has melted and is bubbling, add your eggs and move the pan around to spread them out evenly.
4. When the omelette begins to cook and firm up, but still has a little raw egg on top, sprinkle over the cheese and chives. If you’re adding in any additional ingredients, now’s the time to do so. Bacon, roasted cherry tomatoes, goat cheese and basil go really well together, but if you’re in the mood for mushrooms, leave out the tomatoes and swop out the basil with rocket.

5. Using a spatula, ease around the edges of the omelette, then fold it over in half.

6. When the omelette starts to turn golden brown underneath, remove the pan from the heat and slide the omelette onto a plate.
