Gingered sweet potatoes

It’s time to shine the spotlight on tasty, yet fuss-free, side dishes. We think main meals sometimes get all the credit. These gingered sweet potatoes are the epitome of maximum flavour and minimum hassle. It’s a one-pot wonder recipe, made with ease in the Wonderbag.

This recipe is ideal for any slow cooker. So whether yours comes in shwe-shwe disguise or any other – give it a go. The bonus about the Wonderbag, of course, is that it will save you precious power.

Ingredients:

4 sweet potatoes, peeled and cubed (we used white and orange sweet potatoes for variety)
2 large knobs of ginger, peeled and chopped finely
1L chicken stock
Salt and pepper, to taste
Fresh chilli, chopped, to serve
Fresh coriander, chopped to serve

Method:

1. Bring the sweet potatoes and ginger to boil in the chicken stock for 10 minutes.

2. Remove from heat, place the lid on the pot and place it in the Wonderbag for 20 minutes. (That’s 20 minutes where you can kick back and relax and your stove can have some down time)
3. Drain, season with salt and pepper and serve with freshly chopped chilli and coriander.
4. If the sweet potatoes have overcooked, add a knob of butter and make a chunky mash instead.
