Easy melon and prosciutto kebabs

Who ever it was who first decided to combine the gentle flavour of melon with ribbons of prosciutto gets our eternal gratitude. It’s a light and utterly lovely flavour combination that couldn’t be easier to prepare. This version, skewered on kebabs has the added charm of pan fried sage leaves. Add these melon and prosciutto kebabs to your easy party snack entertaining stash.

Ingredients:

Prep time: 10 min | Cook time: 5 min | Makes: 12

1 sweet melon, peeled, halved and seeds removed
100 g thinly sliced parma ham or prosciutto
12 wooden cocktail skewers
¼ cup (60 ml) olive oil
12 sage leaves
Balsamic reduction
Extra virgin olive oil
¼ cup (60 ml) parmesan shavings

Method:

1. Cut the melon into 3 cm cubes.
2. Assemble the melon and ham onto each skewer.
3. In a frying pan, heat the olive oil and fry the sage leaves until crispy. Remove and place on a paper towel to absorb excess oil.
4. Arrange the kebabs on a serving platter or board. Keep chilled.
5. When ready to serve, drizzle with olive oil and balsamic reduction and sprinkle with crispy sage and parmesan shavings.
