Ingredients:
2 cups raw almonds
3 tbsp brown sugar
1 tbsp honey
2 tbsp unsalted butter, melted
1 tsp ground cinnamon
1 tsp ground ginger
½ tsp ground cardamom
½ tsp ground nutmeg
½ tsp ground cloves
Method:
1. Preheat the oven to 180ºC.
2. Combine all the ingredients, except the almonds, in a large bowl. Mix together well and set aside.
3. Evenly spread the almonds out on a dry baking tray and roast them in the oven for 5 minutes.
4. Remove from the oven and immediately toss the warm almonds through the spice mixture. The sugar should partially melt and the almonds will look lovely and glossy.
5. Evenly spread the spiced almonds on the baking tray again and place back in the oven. Roast for a further 5 minutes.
6. Remove from the oven and allow to cool. The chai-spiced honey and sugar coating will harden once cooled, so gently break the almonds apart before serving.
