- Characteristics: Dark, chocolate-coloured bell peppers with exceptional sweetness. Large, lobed fruits initially green, ripen to a rich smoky flavour
- History: Grown for over 7,000 years in South and Central America. First mentioned in Panama in 1681
- Taste: Smokey and aromatic
- Hungarian Yellow Wax Pepper:
- Characteristics: Long (10-15cm), sweet, yellow peppers maturing to bright red. Juicy and easy to de-seed
- History: Introduced to Hungary in the 1500s by invading Turks
- Taste: Fresh and aromatic
- Topepo Rosso Pepper:
- Characteristics: Italian pimento peppers with thick, meaty walls. Ripe peppers turn bright, deep red with a mild, sweet, slightly zingy flavour
