How to get perfect crackling
What are your best methods for getting perfect pork crackling every time? Is it in the meat cut, the seasoning, the roasting time or temperature? Tell us your secrets.

The first thing I do for roast pork is make cuts across the fat, close together. I then rub salt into the slits, and render the fat. Once that is done I add seasoning to the fat and roast the pork in the oven, fat side up, using stock to cover the meat, but not the fat. Works like a treat every time.
Putting the meat directly under a hot grill when cooked, it's amazing how quickly the crackling bubbles up and goes very crisp
